Pumpkins and Spice....

My brother grew this pumpkin. It must weigh a few hundred pounds. Actually he had two big ones. I can only imagine how many seeds this guy must have had. It took both John ,my nephew, and my brother to get him in the house. Check out the results....

Art didn't grow them, but he cooked pumpkins today and made pies. I have seeds to cook, and enough pumpkin left to make bread or my favorite pumpkin cake.




Karen's Favorite Pumpkin Cake
3/4 cups butter softened
1 cup brown sugar
1 cup white sugar
3 large eggs
1 cup pumpkin puree
1/2 cup buttermilk
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/2 nutmeg
Cream butter, sugar, eggs, set aside
combine puree,buttermilk and vanilla, set aside
combine dry ingredients , in thirds blend all three together until smooth.
Pour into 3-8inch parchment lined cake pans.
Bake 35-40 mins. at 350 degrees

When cool frost with pumpkin cream cheese frosting
1'softened 8oz. cream cheese
1/4 cup pumpkin puree
1/4 cup butter softened
1 tablespoon orange juice
1 teaspoon orange zest
1/2 teaspoon vanilla
add 4 cups powdered sugar
