FACES OF FALL ;o)


I love harvest time in the backyard garden in the Fall. The biggest problem is usually what to do with all that Zucchini. Of course my solution is Zucchini bread. It is sweet, moist, and great with a cup of coffee.


RECIPE FOR ZUCCHINI BREAD

3 eggs
1 cup of vegtable oil
1 3/4 cup sugar
2 cups grated zucchini
2 teaspoons vanilla
3 cups flour
3 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnuts or pecans
could add 1 cup of raisons or dried cranberries
Bake 350

Grease liberallly 2-8x4 loaf pans

In large bowl beat eggs, mix in oil and sugar, vanilla, and zucchini.

Combine flour, cinnamon, baking soda, baking powder, and salt mix into oil mixture.

Add nuts and other if desired. Bake 60 mins give or take 10 mins.
