This Is Why I Don't Cook....

For years Art has been trying to figure out how to make Carnitas meat that pulls apart but is crisp at the same time. We have this favorite Mexican restaurant that serves it this way.
It just figures that with his perseverance to figure it out that he would find a recipe and fix it perfect.
He DID, and I'm going to share the recipe with you. Enjoy!! because it is excellent.
Art made home made beans and tortillas. Looks indulgent but it fit perfect into our weight watchers we just couldn't eat as much as we would have liked, and that just meant that we could enjoy it over a couple of days.

CARNITAS

2 1/2 lbs pork roast, trimmed of excess fat
1 tsp. salt
1 tsp. garlic powder
1tsp. chili powder
1 tsp. dried oregano
1tsp black pepper
1 cup cola
1 orange peeled and cut into slices

Season the pork roast with dry spices. Place in a self sealing plastic bag and marinate overnight.
Place the marinated pork roast in a crock pot. Pour the cola over the pork and cover the roast with the orange slices. Cover, cook on Low 8-10 hours or High 4-6 hours. (Art cooked it for 10-12 hours overnight)

Remove the roast and shred with two forks. Place the shredded pork on a large baking sheet and bake at 425 F for 25 minutes or until the pork becomes crispy. sprinkle some of the leftover juices from the stoneware over the pork and serve right away.

Hello, Dad. That looks really good! I will try it before leaving Vila since we use the crock pot you got us every day. All is well here on the editing of Acts. I am almost done. I miss you and would like to be fly fishing up on the South Platte.
